Abstract

Thesis is devoted to the overall assessment of the risk of fire in the food industry, especially in buildings of industrial mills. The work defines the most common causes of fire in the food industry, provides a summary of fires in this field, including the assessment of the amount of the damages. Further focuses primarily on the field of mills industry, maps the overall condition of this scope on the territory of the Czech Republic, and an assessment of its development in recent years. The next section describes the technological process of grinding grain, the designation of most machinery, giving the individual cases of unwanted combustion and marketing of statistical data to determine the reduction in the probability of the risk of fire. In the final section provides comments on the current status and proposed technical and organisational measures to reduce the number of fires in such premises.
