The theoretical section of the thesis describes the mechanism of dust explosions, risk factors, and the legislative framework, including the European ATEX directives as well as relevant ČSN and NFPA technical standards. The study further provides a detailed definition of the individual fire safety characteristics of dusts, such as explosion parameters, ignition temperatures, and susceptibility to spontaneous combustion. The aim of this thesis is to highlight the lack of available data on buckwheat dusts and to emphasize the importance of determining these parameters for the prevention of fire and explosion risks, as well as for the protection of health and property in food processing facilities.
