Možnosti implementace požadavků automobilového průmyslu do potravinářské výroby

Abstract

Cíl práce je navázání spolupráce mezi automobilovým a potravinářským průmyslem za účelem nákupu rostlinných olejů pro výrobu pneumatik. V teoretické části jsou popsány výrobní procesy obou průmyslů a jejich požadavky na management kvality včetně metodik k řízení rizik a auditování. Praktická část se zabývá porovnáním řízení rizik dle FMEA a HACCP, dále auditováním dle VDA 6.3 a požadavky normy ISO 22000. Stěžejní body práce jsou implementování metodiky PFMEA do systému HACCP na vybraná rizika určená zákazníkem a rozbor interního auditu oproti auditu dle VDA 6.3 včetně navržení opatření k úspěšnému implementování požadavků do potravinářské výroby a absolvování auditu dodavatele dle VDA 6.3.

The aim of the thesis is to establish cooperation between the automotive and food industries for the purpose of purchasing vegetable oils for tire production. The theoretical phase describes the production processes of both industries and their requirements for quality management, including risk management and auditing methodologies. The practical part deals with the comparison of risk management according to FMEA and HACCP, as well as auditing according to VDA 6.3 and the requirements of the ISO 22000 standard. The key points of the thesis are the implementation of the PFMEA methodology into the HACCP system for selected risks determined by the customer and the analysis of the internal audit compared to the audit according to VDA 6.3, including the design of measures for the successful implementation of the requirements in food production and the completion of the supplier audit according to VDA 6.3.
