Technological progress, modern technologies, and the world markets developing despite of the economic crisis, bring highly competitive environment, and necessity to master quality control. Modern systems of quality control are necessary for successful development of the companies in production and service field as well. Theoretical part of the thesis is focused on quality management, especially food safety management. Practical part is dealing with the design of modern and efficient system of food safety management, such as the System of critical points. The design is for a catering unit of an Ostrava hotel.
