Abstract

The aim of this thesis is to find out the risks which have an effect to business activity of restaurant Grácie, their analysis and set up the proposal for the implementation measures to avert the negative aspects of their activity. The risks have been identified by brainstorming method and then they have been divided into three following groups: operational, strategic and economic. The object of risk description has determined their likelihood and impact intensity. The product of these two characteristics is risk relevancy findings, dividing them into normal, important or critical risks. This is necessary information to set up the risks treatments and with use the risk matrix providing the concept for restaurant owner to eliminate the potential negative aspects of risk exposure and its conversion into opportunities to strengthen the competitiveness of particular enterprise.
