Abstract

The diploma thesis deals with sensory analysis of green teas. The primary aim of this thesis is to evaluate the perception of sensory properties of green teas of four competing brands and to identify whether consumers perceive the differences between portioned and non-portioned green tea. A partial aim is to evaluate the packaging of the tested teas. The theoretical part is devoted to the characteristics of the green tea market and the theoretical basis of sensory analysis. In the practical part, a marketing research using the focus group method is carried out, in which the sensory properties and packaging of four green Sencha teas was evaluated. The output of this work is a comparison of the evaluation of sensory properties and packaging of tested green teas and the identification of overall preferences. In the last part of the thesis, proposals and recommendations for individual tested brands of green teas are given.
