Zpracování příručky HACCP pro stravovací zařízení

Abstract

The aim of this thesis was to process a new HACCP manual for the boarded appliance called Areál Na Mlýně, whitch is situated in Kozlovice. The theoretical part is devoted to consumer protection and food issues. In addition, I characterized it´s owner Šmíra-print, s.r.o. and the current tenant company Kaseka Plus, s.r.o. In the application part, I analyzed the current HACCP manual, which I was given the leadership of the company and then I put a brand new guide of the critical points, which was submitted to management.
