Abstract

The bachelor thesis focuses on selecting a new modern mixing machine for the bakery and confectionery company Pekařství a cukrářství Sázava s.r.o., based on multi-criteria decision-making methods. The aim of the thesis is to choose a machine that will improve the quality of the mixed dough and increase the efficiency of the production process. The analysis method compared the existing and new mixing machines. The main result is the recommendation of a new machine, which brings significance improvement to the production process. The thesis has primarily practical significance, taking into account the criterion of the quality of the produced dough, which is an important element for subsequent production.
